With yesterday being Memorial day, I decided to enjoy my family and not post for Mighty Mommy Monday. Instead we took a lovely bike ride in the morning, with the kiddos in the trailer. I forgot about all the potential parades and as a result, we wound up driving all over trying to get to a parking place for the bike trail! Eventually, we settled all the way out in Bellville. My bike was grinding and randomly changing gears, so we called the experience at 8 miles and headed home. It’s been a while since we took the kids out in the trailer and it seemed wiser to take a short trip and have them enjoy it instead of trying to make a certain mileage.

While we were riding back toward our car, Matt suggested heading to the Columbus zoo and for some insane reason, I agreed that it sounded fun. We pulled into the driveway only to find that all the entrances were packed and cars were parking almost to the road! We’ve been to the zoo during the height of the Zoo Lights and it’s still never been that full! Of course, the water park isn’t open in the winter… Anyway, despite the crowds and the heat, we had a lovely family trip and the kids got to see a cheetah and the giraffes. So graceful! We’re zoo members and while I agree with Gretchen on the mixed emotions seeing the animals in captivity, I do so love having the opportunity to show the kids animals we’d otherwise probably never see!

Tomorrow we begin our summer, officially. I’m awaiting a delivery of our new pool (I accidentally ripped ours last year) and we hope to have it set up tonight after the kiddos are in bed. After a big breakfast, I plan to surprise them since they think once the old pool was thrown away that was the end of the story. 😀 And for the next 10 weeks, we’ll practically live outside so I’m going to experiment with a few GF options for our old standby snacks.

It would seem that every time I make this, all that is left to photograph for the blog are crumbs… in almost 4 years of baking this particular breakfast treat, this is the only photo that exists. Taken moments before I ate it.

Which brings me to this recipe. You’ve seen this before as my Nutri-Grain Do Over, but I tweaked it to be gluten free. The addition of flax meal makes the taste a little more nutty, but nonetheless yummy. Oh. And did you know that not all oats are gluten free? So harsh. Yet another package to read…

GLUTEN FREE Breakfast Crumb Bars

    • 1 cup gluten free flour mix
    • 1/2 cup flax meal
    • 1/2 cup packed brown sugar
    • 1 1/2 cups GF oats
    • 3/4 tsp. salt
    • 1/2 tsp. baking powder
    • 1/2 tsp. cinnamon
    • 1 1/2 sticks butter, cut into pieces

Place all the ingredients into the bowl of your mixture and mis until the dough is in little pea-sized balls. Remove 3 cups of the mixture and press it into the bottom of a buttered 9 by 13 inch glass baking dish.  Bake for 12 minutes at 350 degrees.  In the meantime, make the filling. {OR use about 2 cups of fruit preserves}

  • 2 Tbsp. brown sugar
  • 1/2 tsp. of cinnamon
  • 2 Tbsp. flour
  • 1 pound of fruit
  • 1 tsp. vanilla

This batch of ingredients is dumped into a sauce pan and cooked together.  On my recipe card, the note I made was to achieve a “compote-y” consistency.  I like to have a smoothish filling, but still some of the structure of the fruit is there for contrast.  Once you are pleased with the consistency of the filling, pour it over the crust and top it with the remaining crumb mixture.  Finish by baking it for an additional 40 minutes.  Store, covered, in the fridge for up to a week… if it lasts that long.

Keepsake Handprints

Some of my best college memories are the ones from my Ecology lab. Specifically the days spent hiking around Oklahoma dealing with my Entomophobia. Loved the class, loathed the insects. Still do. But the point of this is in that class I met my friend Dawn. We were both Biology majors and over the years spent countless hours in classes and study sessions together, but as life has a way of doing, once we graduated and moved back to our respective homes, we lost touch. Thank GOD for Facebook. We’ve since reconnected and been able to share a little bit of our lives with each other again.

In 2012, Dawn started a business, Tiny Prints and Paws, taking the hand and foot prints of her friends’ children (and pets!) in clay and preserving them in beautiful plates. For over a year, this was something that could only be done if you were local to Tiny Prints and Paws or saw their set up at a craft fair. Which was great, but for those of us living 10 hours away, that meant we missed out.

But then… in March Dawn contacted me to see if I’d be willing to be a long distance tester!! I mean… of course!! She mailed me a package of the polymer clay and I emailed for instructions the night before I planned to get my kiddos hand prints. I then separated out clay for each child since we decided to do a plate with both their hands. I rolled the clay out to about 1/4 inch thick (using a playdough roller!) and then pressed each child’s right hand into the clay. Then, I hid the clay. It needs to dry for 72 hours and my kids weren’t convinced that this was a special project just yet and they loved the texture which led to them begging to play with the “special playdough” a LOT.


Once the 72 hours was up, I wrapped up the clay up and mailed them back to Dawn. We talked about colors for their handprints and then what words to write on the plate. I got more than a little emotional because this is just so perfect for me to freeze this moment in time. Their little hands will never be this small again and not only do I have their handprints, I get to have them together, which is even more special because these two are just glued together so it’s the perfect representation of this season!


Each plate takes between 8 and 10 weeks to complete as there is an additional drying period followed by sanding and firing before the paint is applied. Finally, the plate is given one last firing before it’s sent off you! Tiny Prints and Paws has several options, the paint colors are endless and the wording on your plate is up to you! A long over due recipe

As I was going through some of my recipes on this blog, I realized that there is not one actual bona-fide quiche recipe even though I have mentioned it as a freezer meal or something to bring a new mother. Growing up, my mother made spinach quiche on a regular basis, which then led to the addition of asparagus one day and I’ve been hooked every since!

I don’t make my quiche with a crust these days because, um… I don’t care. If you need a crust, go for it, but once I discovered frittatas, I gave up the crust. I make one large quiche every few weeks and add as many veggies as I can. This recipe has peppers, onions, leeks and asparagus, but you can change it up however you like. Broccoli and goat cheese is ah-mazing. I whipped this up Saturday night and baked it while the kiddos were getting baths and ready for bed. Quick and easy and it reheated beautifully for breakfast Sunday morning (and lunch today). I usually split the quiche in half and eat half within the first week and freeze the rest in individual packets.

Essentially, this recipe comes down to 7-8 eggs (7 if you want a compact dish, 8 if you want it fluffier), 4 cups of veggies, and dairy. I like to add bacon or panchetta, but when I do, I don’t add any extra salt.

Quick Crustless Quiche

  • 7-8 eggs
  • 1/2 pound asparagus, trimmed and chopped into half inch pieces
  • 5 slices bacon, chopped roughly
  • 1 cup onion or leeks or a combination!
  • 2 cups diced peppers
  • 1 cup cheese, I used Monterey jack
  • 1/4 cup milk
  • cracked pepper

Preheat your oven to 350 degrees. Put your bacon in a skillet and fry. When your bacon is just crisping up, remove it from the pan and drain. Leave the bacon grease behind and saute the onions and peppers. Remember that you’ll be cooking all of this together with the eggs, so don’t get it too soft. Whisk the eggs and milk together. Add in the asparagus, bacon, cheese and pepper mix. Stir to combine and season with cracked pepper. Pour the mixture into a greased 2 quart casserole dish and bake for 50 minutes. Enjoy!

Work in Progress Wednesday – Stalled

I’m trying so hard to get my sewing mojo back. I was on a roll for a while and life happened, sidetracking me. Nonetheless, I’m carrying on this week. I’d really like to finish this quilt before the weekend so I can start working on a few dresses for Sylvi. She’s in need. This child just wants to wear a dress or skirt every day! And just so you know, Sunday dresses aren’t just for Sunday. Nope. They wear just as well on Monday, Wednesday or Thursday!


After this quilt is completed, I’m planning to attempt my own pattern for the next baby quilt. Then I’m doing another pattern I’ve been dying to try from Camille.


Last week was Quilt Market and my Instagram feed was loaded with the gorgeous fabrics that are coming out soon. I saw this photo late one night and knew right then that I NEED this fabric. I saw it, fell asleep and woke up the next morning wishing I had written down where it was from. And then I panicked because there were over 16,000 IG posts with the #quiltmarket hashtag. It took over 3 hours of scouring the internet, IG and phone calls to quilt shops before I located the source. When I want something? People. As soon as this is available, I will be in possession. All that’s left is to figure out which pattern will display this artistic depiction of my former career in the glory it deserves.

Mighty Mommy Monday – In the last 11 weeks

Last week, I had a follow up doctor appointment to check and see how I was faring after the thyroid diagnosis and to decide what the plan was from here forward. The doctor walked in, looked at me in greeting, looked down at her computer and then jerked her head back toward me in astonishment. My life has changed a lot in the last almost 3 months and she couldn’t get over what she could see. Apparently the fact that my gut is getting healthy is starting to show on the outside.

And in line with the healing gut, the healing soul is also happening. I can’t remember if I’ve mentioned this before, but it really took me losing gluten to realize how dependent I’d become on food to soothe my wounds. Parenting has been tough lately and in the interest of authenticity, I’ll admit that days like these usually lead to me to the dessert shop just a short mile away. I’d say goodnight to the kiddos, jump in the car and walk into the shop to find that my favorite cheesecake wasn’t even halfway gone, so I’d get a slice for that night, the next day and a brownie for hubs. If leaving the house wasn’t an option, I’d bake something. And then eat a lot of it to smash those feelings of inadequacy, failure, disappointment or loneliness down.

The first two weeks of being gluten free were awful. Just awful. I felt that every time I’d open the cupboard looking for a snack, there was nothing. I’d open the fridge and cry because I just couldn’t eat another apple with almond butter on it. I just couldn’t!! Somewhere in the third week, I exercised and realized that I suddenly had stamina I’d never had before. And when I stopped, it was because I was done with the routine and not because my joints hurt. I signed up for the half marathon wondering how much pain I’d be in for the next few months.

In the time since then, I’ve actually begun running with the intent of finishing. My joint pain is gone. Eleven weeks ago, my doctor thought some horrible was wrong with me because of all my symptoms and now, I’m it’s a totally different life. Friday, I did all my regular chores, took care of the kids, ran errands, loaded 22 bags of mulch into the car, unloaded the mulch and still had the desire to go to the Y and run. Just a few short months ago, that desire wouldn’t have been there. I didn’t even get to the Y until almost 830 at night and I knew I only had half an hour to stretch, warm up and run before they’d kick me out. I got on a treadmill in the corner, put on my headphones and ran. When the odometer read 1.6 miles I started to cry because I realized such a huge difference in my life. Even when I was in shape in college, I would have had to stop running to stretch or walk because of pain. But not now. I sprinted as fast as I could to finish out my 2 miles, grinning like a fool and so grateful for the changes in my life. And Saturday morning, I was back to run some sprints with my friend while the kids had swim lessons.

Being gluten free has been such a challenge for me. There are days when I really just wish I could eat whatever I wanted… summer picnics are coming and there’s nothing like a hot dog IN a bun. I’m the odd one out at birthday parties and baby showers because I’m not eating. And I’ve worried about how this would affect my social life because women get together for their kids to play and we always snack! Preferably on baked goods. So yeah, huge inconvenience. BUT from this I’ve really been forced to find healthier ways to deal with my emotions and hard days. And when I’m nervous at a social event, I can no longer rely on food to be my security.

My body is healing and getting stronger, but so is my soul. I’ve always been told that the soul is comprised of your mind, will and emotions. My emotions haven’t been healthy. And as strong willed as I am, when my emotions are a mess, my will is out the window! My mind has been mean to me lately with all the failures and upsets. In short, my soul has been hurting for so long that only cream cheese danishes have been able to help. Now, I’ve learned to talk about what’s going on instead of covering it up. And at the risk of sounding cliche, I’ve discovered how great it feels to meet my goal and have that positive to focus on. I’ve been searching for joy in my life and working to embrace this life, but with the safety of food, I always had something to run back to when growth became too hard.

I’ve always known life was hard, but I didn’t know how to celebrate the hardships as a part of becoming a stronger person. I would have never guessed that the loss of gluten would have forced me to step out from my comfort zone and grow! But whatever it takes, right? 🙂  This week, I’m adding another half mile to my routine and I’m so excited! Yes, I know, I’m a weirdo. But I’m a healthy weirdo!

Natural Parents Network: The Fab Five Stages So Far
I have often heard older, wiser mothers tell me that “each stage will be a new favorite” and while I have loved each moment a little more than the last, there are stages that stand out to me as the ones I never want to forget. Liam will be 5 this summer and Sylvi just turned 3, so I don’t have a huge span to draw from, but these are the stages that when my children are all grown up and having their own, I hope to be able to impart my delight for these moments that may seem so small and fleeting, but are just so precious. I cannot say there is one stage that rises above the rest, but I can narrow the choices down to five favorites.

The hidden weeks

Oh my. For me, these weeks were 13-18/20 of my pregnancies. I could feel the baby fluttering and moving, but no one else could. For those weeks, the baby was allllllll mine. My belly wasn’t big enough that people felt the need to touch or comment, but there was enough that at night, I’d lie on the couch and rub it, delighting in the little “bubbles” of movement after. Once these weeks passed, we knew baby’s gender and name. After that point, the baby was property of the world (ok, I exaggerate, but really…people really seem to feel that way about babies!) and I had to start sharing. So to me, those precious moments when I was the only one in baby’s world, those were a favorite.

Mighty Mommy Monday – Muscle love

I love my biceps. And my calves. And my thighs. Why? Muscle. Oh my golly, I love watching my muscles get stronger and my children (and husband) frequently catch me in the bathroom flexing. I’ve stopped apologizing… I like that my body is getting stronger!

But along the way, I’m noticing a lot of soreness after my long runs or after a kettlebell session. I’ve been looking at different options, and really wanting a product/solution that will be safe to use on all members of the family. Liam has recently been struggling with muscle soreness due to twice weekly swim lessons and soccer, two days of gym classes and what I think are growing pains. Initially, I turned to homeopathic options, but I’ve realized that I also want something ON the muscles. (Before I continue, I do want to mention that I’m not about to ditch the Motrin, but I also want to deal with the core of the discomfort and not just cover it up.)

Reading through a facebook post I found a list of doTerra oils and noticed that they had a blend specifically for sore muscles. I called up my bestie, Jen, who is a seller (here’s a link to her doTerra page in case this post inspires you to help your muscles, too!) and she informed me that not only is there a straight oil, but a muscle rub cream. We love it! I happened to buy on a week when I was adding another half mile so I needed it almost right away. Soothing and cooling, it eases my discomfort quickly. Liam has taken to asking for it rubbed on his back and legs at bedtime after his sports days. And as an added bonus, he’s actually sleeping now!! According to doTerra, Deep Blue is an essential oil blend of wintergreen, camphor, peppermint, blue tansy, German chamomile, helichrysum, and osmanthus. There’s a lot in the blend, but that would be what makes it efficient!!

Apples for Mama

Since going Gluten Free, I’m just not motivated to bake as much. I’m worried it will be a disaster and/or taste funky. I know. I overthink. However, it just seems to be a learning curve that for me will take time and as with anything worth doing, it will take patience.

But not this apple cake. I found it on Pinterest and planned to make it for a Pinterest Party hosted by my MOPS group. When you go to parties like this, everyone brings an appetizer or dessert they pinned and hadn’t had the chance to make or just loved and had to make again. I usually bring a cheesy dip with crackers. Or cake. 🙂 Who doesn’t love cake?! Of course, on the day of the party, I was in a hurry and hadn’t checked the ingredients in my cabinets so changes had to be made.

To be fair, I have made this cake in the original form and with my own changes and both ways it is delightful. It should be mentioned that the cake is not light and fluffy. All those apples compact down and make for a dense product that is actually great with bacon and eggs in the morning. Ahem. One other note, IF you have leftovers, don’t leave them sitting out on the counter. Keep it cold, but feel free to warm it up and add a scoop of ice cream when you’re ready for a snack!

Gluten Free French Apple Cake ( Adapted from A Girl Defloured)

  • 5-6 golden delicious apples, cored and thinly sliced
  • 2 Tbsp. dark rum
  • 1 tsp. lemon juice
  • 3/4 cup, plus 2 Tbsp. all purpose gf flour blend
  • 1/4 cup almond flour
  • 1 cup, plus 3 Tbsp brown sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp ground nutmeg
  • 1 large egg (whole)  and 2 egg yolks
  • 1 cup butter, melted
  • 1 cup whole milk
  • 1 Tbsp. vanilla

Preheat your oven to 325 degrees. Place a 9-inch springform pan on a baking sheet. Grease the springform well, making sure to get into the little creases and grooves where the sides meet the bottom.

Once your apples are sliced, place them in a sauce pan and heat them through so that they are soft, but not mushy. I added a little bit of water to help keep the apples from burning while they were cooking. Remove the apples from the heat, pour the rum and lemon juice over and toss. Set aside while they cool and work on the rest of the cake.

In a large bowl, mix the gf flour, almond flour, 1 cup of brown sugar, baking powder, baking soda, and salt. (When scooping out the gf flour, don’t pack it down like you do with traditional flour, instead scoop and then shake the excess off to as close of a level as you can get.) Whisk well to combine and make sure there are no lumps. Add the whole egg, butter, milk and vanilla and mix well. Remove one cup of the batter and place in a separate bowl. mix into the larger portion the egg yolks and the apple slices. Pour this into the springform pan.

Add the last two Tablespoons of gf flour into the reserved cup of batter and mix well. Then, pour that over the apple batter and smooth over. Mix the remaining brown sugar, cinnamon and nutmeg together and sprinkle over the cake. Bake until the cake is set… 1 hour 15-20 minutes.

When the cake is done baking, remove it from the oven and allow it to cool for at least 10 minutes. Then run a knife around the edge of the cake and release the springform. If you want to remove the cake from the springform bottom, it’s tricky so make sure you have help! Serve with ice cream or a dollop of whipped cream!


This is truly a “thank-God-it’s-Friday” sort of post. Except that after this post, I take a deep breath and then dive back in for a few more days. It is what it is, but I tell you that I am not an on-the-go sort of person and when I have a loaded calendar, I stress out. Is it awful that when my little woke up with stuffy noses, coughs and low grade temps this morning I breathed a sigh of relief because no one would want to be around us while I pumped vitamins and fruit? Probably, but I’m honest.

So here’s a quick catch up on the last week:

~ Soccer started! Soooooo exciting! And exhausting. Not so much for me, but for a certain 4 year old who is so wound up by the time drills are over he’s had a terrible time calming down for the actual scrimmages. Two practices this week and both days have ended in a tearful little boy who just can’t quite process all that emotion. I’m hopeful now that he’s back in the swing of things next week will go more smoothly.

~ Liam swam all by himself yesterday! I sat on my bench and cried. I’m SO proud of him! He’s doing great with the floatie, but this was the first time for him to swim from the wall to Miss Brooke and then back to the wall. Proud Mama!

~ I was in Columbus all day Wednesday for the Moms Clean Air Force Mama Summit. Excellent day, scary traffic. Whoo. I need to live in tiny towns for the rest of my life. However, as my BFF pointed out, I did it. I did what terrifies me by driving through a big city during rush hour AND meeting with our elected officials all by myself! Check me out setting examples for my children! 😉

~ I’m working on the final newsletter for my MOPS group for this year. I love MOPS and the community it has created for me, but I’m ready for summer break. I have used the last two summers to read the books that go along with the theme and prepare myself for the written devotionals and newsletters. The theme for 2014-2015? Be you Bravely. I love it. And I think I’m going to treat myself to this tee as a prize for getting my Steering Team responsibilities done for yet another year!

~ I went to Old Navy last night after the kids were in bed. This mama had no shorts. No capris. Nothing for summer. Turns out, the more you run, the smaller you behind gets and it’s just not cool to your britches falling off as your daughter tugs on them to gain your attention.

~ I downloaded the Wudnerlist app to my iPad. There are big, pink, puffy, sparkly hearts in my eyes for this app. And the “swoosh” sound effect when I complete a task. Sigh.

~ It’s raining today and I couldn’t be happier. I ran out right before it started and cut huge bunches of lilacs for my house. Lilac is the sweetest spring smell ever.

~ Now, it’s a return to my chores and to-do list. Quiet time is over and Liam is anxious to stomp in the puddles. Sylvi is sleeping in her room, snoring away her congestion.
