Just for a good laugh on your Monday night, I thought I’d update the Pinterest meal experiments in this house. Thus far, there have been some real… ah… bombs.
First of all, I really want to resume my bread baking. It’s shameful, but once again, I find myself grabbing a loaf of bread at the store when I have all the ingredients at home! I tried out this Potato Bread recipe. I love that it made 2 loaves, has amazing flavor and freezes well. What I do not love? Um, it doesn’t look a thing like this photo from the blog. Not one bit. Also, I apparently didn’t get the potatoes smooth enough, because it’s a little odd to be eating a pb&j and have a hunk of potato in your teeth. But you know… I’ll keep trying!
Next up, I tried a new coffee cake recipe. MOPS is starting up again in a few weeks and the Steering Team always has to bring the first brunch foods… I like to sign up for a baked good because I can prep the night before. And, Strawberry Cream Cheese Coffee Cake?
Um yeah… once again, not really sure what happened. But it does NOT look like the blog!
At this point, I was getting worried. I mean really… how many failures can one have in a week?! Thankfully, though, the next two recipes weren’t baking and I was pleased with how they turned out. I made the Ravioli Lasagna on a Thursday night before I ran off to my Mommy and Me Fitness class. Quick, simple, filling… great things about a pre-workout meal. It wasn’t too heavy and I didn’t get hungry quickly. High five!
On Saturday, we had a soccer festival at noon, but I wasn’t sure if there would be food, so we had Sloppy Joe Quesadillas. Oh my. I mean, I’ve been eating sloppy joes for years, but never thought to put them in a grilled tortilla. Soooooo good! This recipe will for sure become a staple in our home. I will tell you that I make my own sauce from the Ball recipe ketchup, brown sugar, Worcestershire sauce, onions, garlic and vinegar, but I don’t actually have measurements. I eyeball everything and then stir it around until it’s nice and thick.
I’m starting to sift through my pinned recipes to figure out what my next plans are. I really need to get some good breakfast recipes before school starts next week and then get snack ideas in hand. Liam will have to bring a snack each day of school, and I’d like to have a good list of options so he doesn’t get bored. Or hungry. There are few things worse than a hungry preschooler!
